The influence of VJ. Sting pepper sauce traces back to the small Caribbean island of Trinidad. Sitting on the continental shelf of South America and known as the ‘Rainbow Island’ for its diverse range of culture and ethnicity, is the childhood home of Vijai Singh. The place where his passion for flavour began.
Like many Trini’s, Vijai is of Indian descent but grew up on the West Indian cuisine. His mother’s Pepper Sauce was a necessary condiment at every meal. When he moved to Kingston, Ontario to study Law at Queens University, Vijai could not find hot peppers anywhere, let alone ‘pepper sauce’.
Upon graduation, Vijai moved to Niagara where he began making his own pepper sauce for both himself and his friends’ consumption. Eventually he began experimenting with Trinni style flavour and the best ingredients that the greenbelt of Niagara had to offer. After a few years he perfected the sauce and his wife, Benda encouraged him to introduce these intense flavours to the larger community in hopes of delivering the perfect ‘STING’.
Today, Vijai has a thriving and rigorous criminal law practice and uses cooking as a much needed creative outlet… because to him food goes beyond the kitchen. This pepper sauce has become a lifestyle for him and those around him.
